Don Pancho's opens six mornings a week at 4:30, which is why the trays are already full when most people are still asleep. Pan dulce by the piece, tamales made that day, cafe de olla, and cakes built for whatever you are celebrating.

The cases fill up before dawn. Conchas, orejas, cuernos, empanadas, polvorones and the rest, set out on trays and sold by the piece.

Alongside champurrado, the traditional warm masa drink, and juices from the counter.
Bolillos and dinner rolls
Sold loose by the bag, or made up into a cellophane gift basket with ribbon when you need to bring something.
